White Bean and Ditalini Soup

Intro:

A perfect mix of warm and hearty for a cold winters night. It's packed with tons of flavor and is super easy to whip up. I started making this soup about a year ago and my family absolutely loved it. The garlic and Italian seasoning along with the kick from the soffritto and paprika make it super delish!

Ingredients:

  • 1 lb. Ground Beef (can use chicken or turkey)
  • 1/2 Onion Diced
  • 1/4 Cup Olive Oil
  • 1 tsp. Salt
  • 1 tsp. Onion Powder
  • 1/2 tsp. Garlic Powder
  • 1 tsp. Italian Seasoning
  • 1 1/2 tsp. Soffritto 
  • 1/2 tsp. Paprika
  • 1/2 tsp. Black Pepper
  • 2 Quarts Chicken Stock (I used Imagine No Chicken Chicken Stock)
  • 1 tsp. Tomato Paste
  • 1 Can (15oz) White Great Northern Beans (Can used Cannellini Beans or Navy)
  • 1/3 Cup Ditalini Rigati Pasta 
  • 6oz Fresh Spinach 
  • 1/2 Cup Grated Parmesan (Additional 1/4 Cup for Topping)
  • 1/4 Cup Finely Chopped Parsley (Topping)

Cooking Instructions:

1.) Add beef to a sizzling hot pot or dutch oven (minimum 4qt capacity) and brown the meat until the liquids evaporate. 
2.) Next onion and olive oil to the pot and stir until onions are translucent. 
3.) Add salt, onion powder, garlic powder, italian seasoning, soffritto, pepper and paprika and stir for 2 minutes. 
4.) Next add tomato paste and mix until fully incorporated. 
5.) Pour in your stock and allow to come to a slow simmer. 
6.) Once your stock is simmering add beans and pasta and allow to cook on low heat for 15 minutes until pasta is cooked. 
7.) Add in spinach and let cook for another 10 minutes.
8.) Mix in cheese.

*Top with additional cheese and parsley in your individual bowls for an extra punch of flavor.
*Can swap spinach for kale and it's just as delicious. 
* I was able to get soffritto from Trader Joes and the Imagine No Chicken Chicken Stock from Whole Foods. 
*Use a good quality Parmesan for optimal texture and flavor.
