Intro:
A Saturday morning treat or shoot even a weekday treat. I came across a recipe online years ago and after multiple attempts and adjustments this is the outcome. Fluffy, buttery pancakes with chocolate chips or even blueberries and syrup!
Ingredients:
- 2 Cups All Purpose Flour
- 5 Tbsp. Sugar
- 2 Tsp. Baking Powder
- 1 Tsp. Baking Soda
- 1 Tsp. Salt
- 1.5 Cups Milk
- 2 Eggs
- 4 Tbsp. Vinegar
- 4 Tbsp. Melted Butter
- 1 Tsp. Vanilla Extract
- 1 Cup Chocolate Chips or Blueberries (Optional)
Cooking Instructions:
1.) In a large mixing bowl combine flour, sugar, baking soda, baking powder and salt.
2.) Add in remaining ingredients and mix until fully incorporated (it's ok to have lumps).
3.) Heat a nonstick pan on medium low heat (because it's nonstick I did not use oil or butter prior to cooking).
4.) Add 1/3 cup batter to pan, allow to cook until small bubbles form (about 1-2 minutes). Next add optional chocolate chips/blueberries, flip pancake and cook for another 1-2 minutes.
5.) Repeat until all pancakes are made.
-Best served with whip cream, syrup and a sprinkle of powdered sugar.
