Chicken Tostadas

Intro:

These tostadas come together within an hour and are absolutely delicious. This recipe is for the chicken itself as the tostada shell is store bought but you can definitely use tortillas, hard taco shells or even make nachos. It's just an easy go to filling for whatever your heart desires. 

Ingredients:

  • 1 lb. Ground Chicken
  • 1/2 Onion Diced
  • 3 Cloves Crushed Garlic
  • 1oz Packet of Taco Seasoning (I used Old El Paso)
  • 2 Small Roma Tomatoes Diced
  • 1/4th Cup Water
  • Juice of Half a Lime
  • 1 Bunch Cilantro Finely Chopped
  • 1/2 Cup High Heat Cooking Oil
Tostada Ingredients
  • Tostada Shells
  • Shredded Lettuce
  • Avocado
  • Crema
  • Mexican Blend Cheese
  • Salsa or Hot Sauce (optional)    

Cooking Instructions:

1.) Add oil to pan and brown onion on medium heat, add in garlic and cook for 2 minutes.
2.) Add in diced tomatoes and cover pan for 5 minutes until tomatoes are softened.
3.) Add ground chicken and taco seasoning and let cook covered for 5 minutes.  
4.) Remove lid and stir mixture, next add in water and cover. Allow to cook for 15 minutes while stirring occasionally.
5.) Remove lid and cook until water evaporates.
6.) Add in lime juice and cilantro.

Tostada Assembly

1.) Top tostada shell with chicken, sprinkle cheese, drizzle crema and salsa, top with shredded lettuce and freshly sliced avocado.
