White Chocolate Rose Madeleines

Intro:
Dipped in white chocolate and sprinkled with chopped pistachios and mini edible rose petals make them the perfect centerpiece for a tea party or brunch.
Ingredients:
- 2 Eggs Room Temp.
- 1 Tsp. Rose Water
- 1/8 Tsp. Salt
- 1/2 Cup White Sugar
- 1/2 Cup All Purpose Flour
- 1/4 Cup Butter
- 1 Package White Chocolate Wafers or Morsels
- 1 Tbsp. Finely Chopped Pistachios
- 1 Tbsp. Finely Chopped Edible Roses (optional)
1.) Preheat oven to 375 degrees F and butter and flour madeleine mold pan.
2.) Melt butter, set aside and let cool.
3.) In a mixing bowl or using a kitchen aid mixer (what I used) beat the eggs, rose water and salt on high speed for 2 minutes.
4.) While beating on high speed add in sugar and continue to mix until the batter is thick and airy
(around 3-5 minutes).
5.) Add flour into mixture a little at a time and gently fold it in.
6.) Add in melted butter and gently fold it into the batter.
7.) Add batter into the molds and bake for 11 minutes.
8.) Remove cookies from oven and allow to fully cool.
9.) Melt white chocolate.
10.) Dip half of each cooled cookie one at a time and set on parchment paper. Immediately sprinkle pistachio and roses. Repeat for remaining cookies.
11.) Allow chocolate to set and cool (around 30 minutes or so depending on room temp.) and enjoy!
