Dutch Baby Pancake w/ Sweet Cream

Ingredients:

  • 3 Large Eggs
  • 2.5 Tbpn. Sugar
  • 1 Tsp. Vanilla Extract
  • 1/2 Cup All Purpose Flour
  • 1/2 Cup Milk
  • 4 Tbsp. Butter
  • 1/2 Cup Heavy Whipping Cream
  • 1/2 Tsp. Vanilla Extract
  • 2 Tsp. Sugar  
  • Strawberries
  • Blueberries
  • Powdered Sugar

Baking Instructions:

1.) Heat oven to 425 degrees F.
2.) Whisk eggs, sugar, vanilla extract, flour and milk in a mixing bowl.
3.) Melt butter in a 10 inch cast iron skillet (make sure the butter doesn't brown or burn and it just melted).
4.) Pour batter into skillet and bake for 22 minutes. Turn off oven and let sit in oven for 3 more minutes before removing. 
5.) To make sweet cream whisk heavy cream, sugar and vanilla on high speed until stiff peaks form. 
6.) Toss blueberries in powdered sugar and lightly coat, dust the dutch baby with powdered sugar to taste and top with blueberries, strawberries and sweet cream.
